Summer Pasta Salad

One thing you might not know about me, I actually really like hosting our friends and it has now been s much fun to be able to do that in our new house, which gives us a lot of space. And with social distancing now starting to relax a little, we have been able to have some our “inner circle” firnd over. Whenever I am hosting, I always have this one recipe which is the staple for me and I love making it and everyone who has tried it has loved it.

I came across this recipe once when I was scrolling (as usual) on IGTV on Instagram and the Hollywood actress Ali Larter had this recipe on her profile. It seemed SO easy and simple to make so I knew I definitely had to try this.

This pasta dish only requires 5 ingredients and there is no cooking, except for the pasta. You can chop and get everything ready but the time pasta boils and cooks and once that is done, just mix everything together and you have a Wonderfull delicious bowl of summer pasta salad ready.

So, let’s get to it!

Ingredients

8 oz pasta ( penne or rotini or any other of your choice)
Olive oil
Salt
5-6 garlic cloves
1/2 jar ofsun-dried tomatoes with the oil in it
8 oz mozzarella (pre-sliced is easier to chop into smaller cubes)
Fresh basil leaves
Cracked black pepper

Steps

Boil pasta as per the instructions on the box.
In a big bowl, mince garlic. You can either do that with your knife or use a garlic mincer.
Roughly chop the sun-dried tomatoes. Add that to the bowl along with 2-3 tablespoons of the sun-dried tomato oil.
Chop mozzarella into smaller cubes and add that to the bowl.
Add some olive oil to the bowl along with the cooked pasta.
Add finely chopped basil leaves to the bowl and mix it all together.

Serve warm or cold!
