Baked Oatmeal Mini Muffins

If I tell you that these muffins are the one thing that is Neal’s favorite, I might not be wrong. I was looking at a few different healthy snackable options for Neal since coming up with snacks every day is honestly a chore. And I came across this one recipe that was just so easy. I made a few slight adjustments and additions to the recipe and it gets ready in literally 25 mins. I always keep them handy, take them on car rides and give it to Neal if he hasn’t eaten properly at any meal. 

Filled with he superfood chia seeds, this muffin is definitely one thing that makes me feel proud as a mom 😀 Anyway, enough rambling, on to the recipe!

Ingredients

  1. 1 cup oatmeal (blended; if using quick/instant, there is no need to grind it)
  2. 2 tbsp chia seeds
  3. 1 tbsp ground flax seed
  4. 1/4 tsp cinnamon powder
  5. 1/2 tsp vanilla extract
  6. 2 tbsp ground dry fruits ( I added cashews and almonds)
  7. 2 tbsp maple syrup
  8. 1.5 cups warm milk

Steps

  1. Preheat oven to 375 F. Grease a mini muffin pan with olive oil spray
  2. Add oats, chia seeds, ground flax seeds, cinnamon powder, vanilla extract, ground dry fruits and maple syrup in a bowl. 
  3. Add the warm milk and mix the ingredients together.
  4. Let it sit for 5-7 minutes so chia seeds can swell up. That helps in binding the muffins.
  5. After 5-7 minutes, put about 1 tbsp batter in mini muffin pan.
  6. Bake it in the oven for 11 minutes. Let it cool so the muffins can take their shape. If you take them out warm, they are a bit easier to break.

You can keep these in the fridge for about 5-7 days. This recipe gives me about 22 mini muffins.
