Instant Pot Chicken Biryani

Hello guys! Hope you had a great weekend and are ready for the week! I am not (as always), but that’s life 😀 I always like to meal plan in advance on weekends and if you are craving Indian food that is easy to make but also absolutely delicious, then worry not because I am here and I bring to you- Chicken Biryani 😀 Honestly, this is such an easy dish but SO delicious, OMG! And since I have gotten pregnant, I crave Indian food so much. And my instant pot has been such a lifesaver! I try to make as many recipes in my instant pot as I can since it is always so easy! This biryani is also in an instant pot, which is ready from start to finish in an hour, maximum! So, let’s get to it 🙂

Ingredients:

  1. 6 Chicken drumsticks
  2. Cilantro
  3. ½ tsp. Red chili powder
  4. ½ tsp. Coriander powder
  5. ½ tsp. Garam masala
  6. 1 tsp. Turmeric
  7. Salt
  8. 1 tsp. Lemon juice
  9. ½ cup Yogurt
  10. 2 Onion- thinly sliced
  11. 2 tbsp. Ghee
  12. 1 cup Basmati Rice
  13. 1 ½ Bay leaves
  14. ½ cup Milk
  15. 15 strands Saffron
  16. ½ inch Cinnamon sticks
  17. 1 tsp. Black peppercorn
  18. 4 Black cardamom
  19. 6 Green cardamom
  20. ½ tsp. Cumin seeds
  21. Chopped cilantro

Steps:

  1. Make small cuts in the drumsticks and prep them for marination
  2. For marinating, add the ingredients from 1 to 9 a bowl and keep it aside for an hour.
  3. Add saffron to warm milk and keep it aside.
  4. Switch the instant pot on sauté and add ghee to it.
  5. Add 2 cups water to the rice and keep it aside for 15-20 mins.
  6. Add whole spices and onions and cook until onion caramelizes. Once done, take out half of the onion and keep it aside.
  7. Add marinated chicken and mix it well with the onions and whole spices.
  8. Spread the chicken evenly in the instant pot.
  9. Drain the water from and add the rice to instant pot evenly over top of the chicken.
  10. Add 1 ¼ cups of water to the pot.
  11. Close the lid and change the instant pot setting from sauté to manual pressure and cook it on high pressure for 4 minutes.
  12. After the IP beeps, do NPR for 10 minute and then release the pressure manually.
  13. After you open the IP, garnish the biryani with the left caramelized onion you took out in the beginning, warm milk with saffron and chopped cilantro. Let it stand for a few minutes and it is ready to be devoured! Enjoy!!
