Easiest 15-min Quinoa Kale Salad

Happy Wednesday you guys!!! We are 2-days away from the weekend, woohooo! 😀 Not that I have any exciting plans, but just like everyone, I love weekends! Oh, and I also went to a rooftop pool party yesterday and it was so much fun!! I love these influencer events, you get to go, meet people who are in the same business as you are. But since I have been trying to eat healthy, this sometimes get in the way of that.

If you follow me on insta stories, you might have seen me posting about my healthy food recipes and one of my most requested recipe is the salad that is our household favorite. Hubby wasn’t really a fan of salads before but he actually prefers it over other food! Now, that right there, is success! 😀 we actually make it every other day and just switch up the dressing to give it a different flavor. But trust me, this is THE EASIEST one!

Since so many of you have asked- I thought a blog post is more fitting to share it. So, here we are! You can switch up the veggies or greens as you wish.

Ingredients:

  1. Quinoa
  2. Kale (can also add spinach and arugula)
  3. Sweet pepper
  4. Cucumber
  5. Cherry tomatoes
  6. Sunflower seeds
  7. Marcona almonds
  8. Corn
  9. Chicken (optional)
  10. Feta cheese
  11. Salad dressing (of your choice)

Steps:

  1. Cook quinoa with water in ratio of 1:2. I wash quinoa first and then add 2 cup of water with 1/2 cup quinoa. Let it boil and once the bubbles start to come, put it on medium-low for 15 mins.
  2. Once cooked, switch the gas off and let it sit for 5 mins. You will have a fluffy quinoa which is cooked to perfection.
  3. While quinoa is cooking, chop the rest of the ingredients except sunflower seeds and macron almonds.
  4. Put everything in a bowl, mix together. Add salad dressing, feta cheese, sunflower seeds and chopped marcona almonds on top.

Now enjoy your salad!

Notes:

** You can also add sautéed chicken to add more protein to it. We didn’t have any in the house at that moment, so we didn’t add any.
