Happy Monday you guys! And Merry Christmas Eve! I know1 everyone is very excited to be heading home, meet their family, dress up and eat lots of food, right 🙂 We don’t have our family here and it’s just my husband and I, but I am not letting that stop my festive mood. We have been cooking and baking so much lately. Day before, we just whipped up a banana bread because I have been wanting to make that for quite some time (and also, the bananas were too ripe, LOL).
It was honest to god, the best I have ever had! Very moist (lol), and the chocolate chips made it more interesting, which is a plus because I love anything that has choco-chips in it. I also added a dash of cinnamon, so you know, goes with the whole festive season 🙂
We are also making chocolate chip cookies, gingerbread cookies and I might (MIGHT) try the Christmas Fruit cake, so lots of food stuff coming on the blog too 🙂

- Banana - 3 ripe
- Melted Butter- 1/3 cup
- Sugar- 1/2 cup
- Egg- 1, beaten
- Vanilla Extract- 1 tsp
- Baking Soda- 1 tsp
- Salt- a pinch
- All Purpose flour- 1 1/2 cups
- Chocolate Chips- as much as you like 🙂
- 1. In a bowl, mash 3 ripe bananas until they are smooth.
- 2. Add in melted butter and mix again.
- 3. Add the rest of the ingredients, except chocolate chips and mix it all until it is smooth and there are no lumps.
- 4. Add in the chocolate chips and fold them in the batter.
- 5. Bake it in 350 F pre-heated oven for about 40-50 mins, depending on your oven. Mine took 45 mins.
- 6. After taking it out of the oven, let it cool completely before digging in!
- I also added a pinch of ground cinnamon for added taste.
